When we are encouraged to eat healthy, "eat more fruits and vegetables" is one of the most common pieces of advice we hear. But when it comes to eating more fruit, we get mixed messages about how healthy it really is.

Some say that its sugar content means that fruit is not as healthy as many experts suggest, while others believe that fruit is healthy because its sugar is natural and contained in the fruit's cells.

What's in fruit

The idea that fruit is good for you is based in large part on the fact that many fruits are low in energy and full of nutrients. Nutrients include vitamins, minerals, fiber and bioactive nutrients.

Fruits also contain sugar, and the amount can vary greatly. Some are very low in sugar, such as cranberries(3.5%) and blackberries (1.5%), but some tropical fruits are surprisingly high. These include mangoes (14% ) and pineapple honey (19%).

Effects of freezing

Freezing fruits often involves minimal processing, with only a brief heat treatment before freezing to stop enzymes from breaking down the fruit, which would otherwise cause spoilage and flavor changes.

Freezing is usually a good way to preserve nutrients compared to other methods such as canning and refrigeration. This is largely related to the relatively short heat treatment time used for bleached foods prior to freezing, as opposed to the longer heat treatment time for canning.

Thawing should not result in significant nutritional loss. However, in freezing soft fruits, the cell-damaging effect of ice crystals can cause the fruit to turn into a paste, and then water-soluble vitamins and minerals leak out.

Effects of drying

Drying (water loss) greatly concentrates the sugar content of the fruit. For example, the sugar content of apricots rises from 9.5% when fresh to 54.2% when dried.

This is why some people describe dried fruits as being like sugar bombs. Although the World Health Organization does not categorize dried fruit as something we should limit in our diet.

Dried fruit can also have up to 6 times the energy of fresh fruit due to the concentrating effect of removing water. Therefore, if you want to watch your weight, it's best to watch the portion size of dried fruit.

Freeze-drying

Freeze-drying involves first freezing the fruit and then placing it in a vacuum at very low pressure. The low pressure causes the ice crystals to sublimate rapidly, turning them directly from solid ice to water vapor. This process removes water more efficiently than conventional drying.

Effectively, the water content of the fruit is reduced, but the structure of the fruit is maintained. This makes this method of preserving foods particularly suitable for soft fruits, such as low-sugar raspberries and strawberries.

Freeze-drying is said to be one of the fastest growing trends in food, with sales of freeze-dried fruit expected to reach $66.5 billion by 2021. But because freeze-dried fruit contains less water than fresh fruit, you may end up eating more of it than fresh fruit, which means more nutrition.
